Julia Clark is a professor of paleontology at the University of Texas at Austin. Oftentimes, these dinosaurs in the movies are making really scary sounds as they're chasing prey items or children. That's not a context in which most predators produce sound. If you let out a blood-curdling roar, all you're going to do is scare away your supper.
