What Are the Specific Pigments?
Anthocyanins are the pigments that color most flowers and some fruits. They don't hang around long in once you've ingested them, they can be detected in plasma at anthocyanins about four hours after consumption by humans but they disappear pretty quickly. There have been hypotheses that it's their metabolites that are the active components in promoting health. I'm not sure that that's exactly true. It may be that they don't have to be actually bioavailable to have a major impact on health. So yeah, and also maybe they're antioxidant properties or bioavailability.
