Alcoholism and the Unofficial Regulators

In Europe, servers tend to get real salaries. In the United States, especially when I was waiting tables and working in bars, we would get a special minimum wage for tip earners. And so if I didn't get tipped, I was actually losing money. There's a perverse incentive system in the US to let people get as drunk as possible...and even encourage them to drink more.
