What's So Special About Sour?

There must be something special about sour that we need it. Give a sheep, tor give a lemon to a sheep and the sheep says, it tastes bad,. So what's up with that? Sour is basically a rough proxy for low ph the presence of acid, ca, citrus and lemons. Some animals kind of dig sour. Some animals don't get away, get that away from me.
