Why You Can't Eat Grass Without Microbes?
We can't eat grass because we don't have those same gut bacteria. Cows could not live without microbes. cellulose is a structural thing that is much harder to break down than starch. There's also the question of, like, what is it about cellulose which is just a glucose polamer? It's surprisingly complicated.
