In New York City, when I went to try to find pork cheeks in my local butcher, people said, huh, why would you want that? We don't have that. Down here they sell them, because there's a lot more fascination with pork down here. All of a sudden these foods have become a part of how southerners view their culture. When they re-appropriate would have been sub-natures in the past through the market, the prices of these products go up. So people have relied on these products, no longer can afford them.
