With red wine, they go through primary fermentation where the sugar is fermented by yeast on their skins. Time and temperature affect how much just both of those things come out in the fermentation. With white wines, generally speaking, I mean, this is not true if you're making skin contact white wine or doing an oxidative style of white wine making. So with red wine making, that actually goes through its entire fermentation, primary fermentation on skins and then you press off the skins.
