Cabot uses all cow's milk, but you can also use goat milk and sheep milk. In a factory setting like this, milk goes through a lot of tests to make sure it's safe to use. The first test happens even before the milk is loaded off the truck when it gets checked for bad bacteria and antibiotics. To pasteurize the milk, it gets heated up really fast to kill off any lurking bad bacteria then cool down so it doesn't cook.
