You've got to hold up the middle and also allow steam to be released. You do want some kind of metal or a tin to help you because, yeah, the fats in the pastry are going to warm up as they're baking. And so if there's a lot of fat in there, it's going to be likely to collapse unless you've got some kind of structure around it.
