I think if something is not fun and like isn't stimulating, you don't feel like doing it, that's a great reason not to take on a task. It seems like there's these kind of dual traps, one on either side. I have seen the people switching projects a lot in the past. If you are just bored of doing something and you're not going to feel motivated by going forward, then that might be a good reason to quit even if there would be a lot of value from continuing. But maybe what you need then is then you need to become a manager who trains other people and like change the role but still get lots of value from all of the experience that you
