How Do You Develop Recipes?
When i was working in the big s, we always used to fridge them to cut them really neatly. So if you fridge them and then heat up your knife, whif them boiling water, wipe it clean and then slice them, you'll get like these perfect slicers. We want a nice balance of seasonal recipes as well as recipes that are appropriate for that time of year - september is one example. When i'm developing a recipe, i'll have my top with me, and i'll be jotting down notes whilst cooking it. And sometimes it requires two or three or four or seven tests. But we always trip l test our recipes anyway, just to make sure
