Is Umami a Taste?

Scientists have found evidence for taste receptors that detect fat, starch, calcium and even metals like iron. Scientists are trying to build the case of whether these should be considered tastes. In 20 years we will probably come some kind of a consensus on it, but this position is not there yet. The thing that's still very much under investigation s whether that signal from the taste receptor is sent to the brain or if we actually use the information misus.
