How to Toast Nonfat Milk Powder in the Pressure Cooker
We've actually had this problem in the kitchen. And one solution is to toast the milk powder separately like you're doing, putting it in a small food processor and then adding it to the dry ingredients. Do the butter separately. Because I think what's happening is when it's added to the butter is you get the clumping and maybe that's an issue about temperature. But if you put it in with a flour, I think you might avoid that problem. We did this with a cake recipe that had brown nonfat milk powder in it. It seemed to work. The most recent thing we came across was putting the milk powder in the pressure cooker and putting it on the instapot
