The molecules surrounding the violin vibrate when we play a knot. And that vibration travels through these molecules, through the air. As it does so, it encounters resistance as the air molecules bounce against one another. And thus sound comes in waves - and how many waves are created determines pitch. What determines whether something sounds grave or squeaky is simply how fast it makes the air vibrate.
