Baiju Cocktails in Chinatown

There are places in Beijing where there are baiju based cocktails. The ones that I've had are all kind of designed around the taste of baiju. What's interesting is Li Huang people I saw running the individual, they're all Chinese folks. If you go to Chinatown, almost all the businesses are operated and run by second and third, fourth generation Chinese folks. Some elements of Chinese culture that I take for granted as existing don't completely still fit.
