I just feel like there's chefs that just cherry pick what is new and niche to them, but don't pay proper tribute to the people who actually created it. So then when a fancy restaurant like takes that concept, but charges, I don't know, like 10 times more for that than what immigrants would charge for that. I just find it so wrong. It reminds me of an episode of ugly delicious where David Chang talks about Indian food and how Indian food is kind of portrayed in American media.
