Medium or medium firm is the most versatile because it's still quite tender, but you can also pan fry it so that it develops across. There's a recipe in the book that shows you how to pan fry tofu without having to press it. So I feel like I would use soft tofu more in soups, but for this kind of medium firm tofu, it's great for blanching or stir-frying. And there's one thing I learned so much about in this book was not just tofu, but all the different sort of soy tofu products.
