Shmu Is the Best Fish in the World
David had been cooking around the bay area forever and seen it all. He just knew that his audience was going to gobble this a bottom feeder fish right up. When i ask him how to plate something, he would respond with this totally matter of fact, dead pan answer in his okno charming, nasal voice. And smo was his catchall term for anything from pompure to bronda to fava bin, pure, anything that was paste. Even if it took forty hours to produce and was made from pure white truffles and ground up diamonds, it still fell under his definition of schmu.
