A common phrase in crypto is "not your keys, not your oin" That means that only those who have the private key to a piece of currency can spend it. If you want absolute control over your crypto currency, then you need to be the only one holding your private key. You can think about as a key to a safe deposit box which holds all your crypto. All the crypto is held on the block chain where it's actually stored. The only difference is who has the ability to spend it.
