The Difference Between SMM and DMS in Malts
DMS boils at like 99 Fahrenheit, 37 C. It takes temperatures near boiling for SMM to degrade into DMS. Modern malts are actually lower than what it would have been 100 years ago. But we're still not getting this DMS in most beers these days. We've tried very hard to do that and it's been very difficult.
