The only way to make cheese industrially was to get the rennet from baby calves that were only a couple of days old. Around over 80% of the cheese produced in the world is made using fermentation. So we thought, look, we've replaced the pig for insulin protein production as a society. We replaced the baby cow for rennet protein production. And can we replace animals more broadly from the protein production process? That's really the innovation that we're creating here. It's democratizing that technology and applying that across the board.
