The R&D Process for White Asparagus
When you decide on a new dish there are anchors of the Addison menu that don't change much but when a new dish like this comes take us through the R&D process. How many versions of this before you're happy with it? You know obviously as we all know it starts with the materials when the materials are right. We were looking for a new chilled springish style dish. Asparagus just obviously works by choice because of this time of year. The greens are coming from Northern California. Great, the Delta ones, we're all very aware of them. Some chefs do. I think they eat best cold. So that was a cold dish.
