Adam Copnick has been meditating on the difference between soft and showy kitchen skills. He once got a lesson in chopping shallots from André Sultanr himself. Beating egg whites is one that he's always thought was extremely effective. It seems to him that those soft skills of the kitchen are very different from what we might celebrate on television.
