The standard story as I understand it is that there's an angry God who demands regular sacrifices and like the story in the Aztecs was that there's this God who moves the sun around the earth. And if we would all need to arrange for it and but it didn't have to be me or you, as long as somebody got sacrificed. That was good enough. The other big difference is, you know, from the axial religions on religious sacrifice and many kinds of sacrifice are personal choices. If you're a monk, whatever, then you've chosen to be a monk, and you're sacrificing as a way to show your personal commitment to something.
