The Benefits of Different Vegetables

The average vegetable has somewhere between 500 and 1000 different chemicals. If 10% of them are different from different varieties, you're still getting different chemicals that might feed a different set of microbes or different strains of bacteria. And so at our current level of knowledge, it may be next year, I say that's not true, but at the moment, I think that is true. Different bell peppers, different colored carrots, different types of lentils, they all count.
