I've never really heard a convincing explanation for why humans have APO B when it seems that every other species gets away without it. This to me is one of the most interesting teleologic slash evolutionary questions, which is, was God just pissed off at us? My dogs, pigs, rabbits, they all make APO B in both the gut and the liver.
