Pitch is the default mapping that everybody uses when they start making sonifications. It's good for teasing out very, very small differences in parimeters. If you're showing like the quantity of something, then volume or number of parts or distortion can be a more effective way to communicate that data. The tambr that you get from different instruments feeds in massively to the atmosphere of that personification that you've created. You know, sometimes you might want to use strings, or you might wants to use a flute, or you may want to use a percussion in some way, or synthesizes.
