Quantum field theory in Minkowski space has nothing to do with gravity, but it's very similar to what gives rise to black hole radiation. In general, relativity is a classical theory. Gravitons are what happen when you quantize gravity. We don't have the once and for all full theory of quantum gravity, as I'm sure you've been told,. But we have no problem looking at tiny variations in the curvature of space-time and quantizing them.
