The Problems With Small Fermentations

It's very difficult to make natural wine at home because you expose, you're using, you're working in smaller quantities. And there's so many ways it can go wrong or fermentation doesn't kick off quickly enough. So any, anything that gets into it can take over that whole quantity much more quickly than it could take over in a larger volume. The main thing that is problematic with small fermentation's is not having enough heat.
