In hebrew, the word for god is called eloa a. It can also be used to refer to pagan or true gods. Elohem is just the plural form of eloa. Even though you'd think it means god's plural, it really means god singular. This is something we see in other languages, including english. For example, there are some words that are grammatically plural even though they refer to a single thing - like billiards and mathematics.
