What I Don't Like About Wagyu?
I think that the wagyu that is sold in America is a marketing lie for the most part. It's hard to verify the genetics. A lot of its cross bread, which can still be delicious. I'm not saying it can't be delicious. What I am selling is the marketing behind it. And also like every recipe now is a five wagyu tallow and shit like that. The add ons are everything that's sort of wrong with food, right? So that's what I don't like about wagyu. You can have wagyu here, but it's again, I can make cheddar cheese anywhere.
