The Evolution of Ultra Processed Food
Processing is ancient. Humans are what we call obligate processivores. We have to process our food. So the replacement of butter with margarine is a great example of ultra processing. That happened late 19th century, but it was with the invention of the microwave and the home freezer that these products really took off. In the UK it's been a big part of our diet since the 80s and it's been growing since then. And it's the primary cause of pandemic obesity.
