The Effects of Milk on Capsaicin

Milk is not super polar. So water spreads the heat in your mouth and milk cools it. Milk also has a protein called casein, which binds with capsaicin that makes it even more effective at getting that capsaicin out of your mouth and cooling it down. The molecule just kind of hangs out almost like if you're swishing around oil in your mouth with water is not really going to get it out.
