What Is Durham Wheat?
Ilias has been developing new varieties of durham wheat for more than 30 years. His job is to improve the flavor, durability and yield so growers can produce more wheat per acre. Ilias says he thinks of each wheat variety as one of his kids that he's nurtured from infancy. The board only meets once every two or three years to vote on ilias' creations.
