A cuisine should exist at the scale of an ecosystem rather than an entire country. There's a real opportunity in all of these micro regions to create mini dehases that truly reflect the landscape and make it healthier for the future. I don't know I was just in California and I pissed off a group of people in LA because they were talking about California cuisine but nothing like the wrath of California when it comes to food.
