The heart and blood were essentially food for gods of the sun and gods of the earth, deities who in turn sacrificed or more internal, you could say originally sacrificed something to create the universe. There are three distinct tactics that were used; there's cutting directly under the ribs. And then there's horizontally severing the sternum in order to access the heart. But again, it seems like going under the ribs was the most common technique.
