The Impossible
We started as a no-tipping restaurant just out the gate. The point isn't just to open a restaurant, to play a restaurant. The point is to put something positive in the city and be an anchor of something that hopefully builds from there. You're holding your fist in that way that people do when they're ideals. When you kind of know you're setting yourself up for a more struggle, but you're going to do it anyway, because it's the right thing to do.
