The Stopping Point of Divine Inspiration

Protestants believe divine inspiration has a stopping point. But how would you know that from scripture alone? What if the new testament is not giving a blue print for the church, because the church is already there? The real presence of christianity in the eucharist and the rapture didn't come until we were rear-end ready to face it.
