How to Eat in a Restaurant

The chalomoochie is a dish with multiple textures of the same thing. The daikon on top, it's like a cooling radish, right, to counterbalance what is a rich egg custard. I took that very seriously about five years ago. Really focusing in dialing in the vessel as much as the composition. It was about sitting down and eating the whole meal that changed.
