Soy Leg Hemoglobin
Most of the enzymes that are your detergents and stuff like that are produced by microorganisms. So we wound up putting the plant gene that encodes soy leg hemoglobin into yeast, genome. And so they were able to produce it. We also looked at similar heme proteins from everything from paramecium to barley. Performing meaning it just made the tastiest burger, stayed fresh the longest.
