Socrates says you will come to see that beauty is even more perfectly instantiated in the soul than in the body. Once you've started to love beauty you will then divert your attentions onto beautiful souls and fall in love with beautiful souls. Freud was later hugely inspired by this particular speech in the symposium. It's one of the most famous wonderful disturbing passages in Western literature.
