In 18 84, the writer edwin trafton invited several adventurous friends a dinner at the chinese delmonico's. A large portion of the community believe implicitly that chinamen love rats as western people love poultry. The first course will be bought on at seven sharp, and stomach pumps may be ordered at nine o'clock. Chapsue is not really even a dish per se. It's more or less a stir of meat and vegetables. Today we might find it totally basic in taste. Now what inspired thousands to visit mott street, the elevated third avenue railroad, was an odd mishmesh of a magical dish called chopsue.
