Extra Virgin Olive Oil - How High Is Too High?

The smoke point of an oil is not related to the point at which an oil is going to become toxic and mutigenic. Butter has a low smoke point because it still contains trace casian and lactos, and that's what burns off in butter. Extra virgin olive oil is very safe to cook with up to a temperature of about 350 or 400 degrees. The only issue is that there are non oil compounds in extra virgin olive oil that can burn. Some of these pito chemicals include oleopurin leo canthal witha - those are the compounds that might start to smoke at a certain point.
