Carwin Graves: Shellfish is still very much there, but we seem to be losing it. We know a few decades ago that pretty much all the cockles, but also other shellfish, were harvested and caught off the Welsh coast in general. And now, you know, 1995% of the catch is going abroad often to places like Spain. So what would it take to get it back into the culture of your generation? Celebrity chefs saying, actually, there's stuff in our own food traditions that is interesting, is sexy, is tasty. It's very interesting for me to think about cockles with avocados.
