How to Make Lamb Pesto
Pesto is such a great source to make from scratch because you just get flavour like you can't find in a jar. So we've got olive oil, parsley, mint, that goes in with some Parmesan lemon zest. And then once your lamb comes out of the oven, leave it to rest for about 20 minutes and then shred it apart using two forks. It should really fall off the bone at this point. Put it on a big platter, serve it up with your pesto. We're covered on the garlic front. There's no garlic in the pesto because there's so much garlic in the lamb. But almost pulled pork the way you're serving
