The Difficulty Adjustment in Bitcoin
I would argue that it is the most important thing and the most important and most original thing about Bitcoin. I think without this Bitcoin would have been an unwarkable digital good. The way it works with gold practically is that the supply grows every year at around 1.5%. And it's very hard to increase it beyond that. Replicates that in a digital way but in a way that is even superior because the supply doesn't just keep growing at 1 or 2% like gold, it actually beaters out towards 0%, making it possibly a perfect monetary good.
