Am canterbury tales is a book that most people who are interested in trying it out, could pick it up and probably struggle their way through. It Is in middle english. Is closer to modern english by far than beowulf. But it hasi peculiarities. In the decades between 14 hundred and 16 hundred, there was a strange thing that happened in english called the great vowel shift. All the vowels, which had previously been pronounced using continental vowels, like the kind of vowels you would find in spanish or german or french, efor, for example, was pronounced eh. The tongue shifted upward in the mouth, and everything became a dip thong.
