Amaya Altayagi and Laura Gonzalez Caratero of the University College London Institute of Archaeology analyzed 24 charred bread samples. They found air pockets in the dough that could only be caused by molding, they say. The researchers based their work on other studies recreating ancient bread with modern ingredients.
