How to Make a Pork and Milk Sauce

Pork cooked in milk. Serves eight people. Three kilos of pork shoulder. Two tablespoons of extra virgin olive oil. A liter and a half of full fat milk. 50 grams of butter. Five garlic cloves peeled and halved. A small handful of fresh sage, two lemons. Rhined, paired and pith removed. Remove the rind and most of the fat from the pork and season the meat. Add hot milk, bring to the boil, add the lemon, and reduce the heat. Carefully remove the meat and serve on a plate over the sauce.
