The problem with the blockchain is that it's a slow computer. You wouldn't want to run a self-driving car on the Ethereum virtual machine either. Centralized exchanges in traditional finance and in crypto have lots of very fast computers which allow marketmakers to constantly update their prices. This is harder when the computers are on the Blockchain, and more expensive.
